Here is a picture of the lovely sunflower pate cabbage boats we made in the Eat For Your Life Class in McLeod Gang, Dharmasala India. The theme was to make easy healthy recipes with local ingredients that travelers could make with no power tools involved. We only used knives and in some cases our personal pocket travel knives – a vegetable peeler, a jar with a lid to shake up our dressings, and a mortor and pestle – though a bowl and the bottom of a glass did the same trick. Sunflower Pate’ Boats
- 1 1/2 cups raw sunflower seeds soaked overnight, and then allowed to sprout for 3 hours
- 1/2 cup fresh squeezed lemon juice
- 1/2 cup chopped onion
- 1/4 cup tahini
- 1 teaspoon sea salt
- 3 tablespoons chopped parsley
- 1 clove garlic crushed
- 1 teaspoon fresh ginger finely chopped
- 1 tsp cumin
- 1 tsp curry powder
Process the above ingredients through a food processor using an S blade or use mortor and pestle. Serve on salad or in a cabbage or lettuce leaf or nori wrap. with sprouts, chopped cucumber and tomatoes.
*Instead of cumin and curry you can add chopped celery and dulse flakes for a tuna-salad taste or sundried tomatoes and oregano for Italian variation.
